Dandelions in bloom

  • The name comes from the French word “dent de lion”, referring to the long jagged leaves.
  • Has one of the longest flowering season of any plant.
  • Is grown as a crop in Belgium
  • Is an ingredient in root beer
  • Originated in Asia for food and medicine
  • Every part of the plant is highly rich in antioxidants that prevent free-radical damage to cells and DNA, slowing down the aging process in our cell.

Location found: Dandelions grow almost anywhere; if there is some dirt in a small crack, plantain will grow there.  And because of that, is considered a nuisance.  It spreads through seeds.

Identification: long, narrow, hairless leaves which are very jagged.  Grows low to the ground.

Edible Parts: all parts can be used, but roots and leaves are most common

Harvesting:

  • Do not pick near roads, walkways or other areas where there is potential of the area having been sprayed with chemicals.

Culinary Uses:

  • Contains more protein than spinach.
  • Can be eaten in a salad or drank as a tea

Medicinal Uses:

  •  Acts like a mild laxative
  • Is a diuretic
  • Excellent for the liver as it helps removes toxins
  • Contains antioxidants and phytonutrients that help fight cancer by slowing its growth and preventing it from spreading
  • Helps regulate blood sugar and insulin levels
